Thoughts on Jackfruit and some recipes

Knowledge on Jackfruit - 
Some Jackfruit are small and some are big(it can go up to 70 kg also). Recently I have seen a news of 50kg of Jackfruit in Kerala. It is very fascinating for me to observe how nature put things so nicely. As you know this fruit has thick outer layer having spike like structures and some thinks that this fruit may be dirty inside. I can not get the point, how people think this fruit dirty! You can consider this fruit like hard cover and soft inside like coconut. You can use this fruit for many recipes. Below I will explain some of my favourite recipes (learnt from my beloved mother).
First of all you need to know how to cut Jackfruit- 
This fruit is hard outside and softer inside with seeds and its flesh. To cut this fruit, you need to relax your mind.
Requirements to cut this fruit-
-Knife
-Oil (any oil you have), It is used to prevent from the gum like substances. Below I have attached a image.
-Some paper or any cloth (on which you can place jackfruit to cut)
I think these are the basic requirements.
I will write here about the cutting process of unripened Jackfruit. 
Step 1- 
Put some oil on your palm and rub it.
Step 2-
This is cutting step. Decide the quantity of portion you want to eat. Take a knife (strong enough) and apply pressure on that portion. First pressure is quite hard and once the cover cut then press smoothly. Remember one thing thus fruit secret gum like substances.

Step 3- 
Removing outer coverings and seeds(this is optional). Then cut it's flesh in small pieces.
These are the three steps to successfully cutting this huge fruit. The most important point is not to forget using oil during this cutting process.
The cutting process for ripen jackfruit is same and easier.
Now let's talk about delicious recipes-
i. My favourite is to eat . You just need to cut and eat and through the seeds. Those seeds can be dried and used for making flour. In my previous blog I have written the benefits and nutritional portions available in this fruit.(below I will put the link of my previous blog)
ii. Panas bhaja recipe -
It is like making some vegetable sabji but you need to stir carefully. 
Ingredients
-Oil
-Finely chopped onion
-Finely chopped green chilly
-Salt
-Turmeric powder
-Tomato puree 
-Jackfruit
-Potato (it is optional)
Process
Put some oil in kadhai (cooking utensil). Let it hot and the put chopped green chilly and onion. Then stir it. Then put jackfruit and potato. Add salt (Taste wise) and stir it gently. After two to three times stir put some turmeric powder to it. Then leave that for some time (some time only). Then add tomato puree and stir gently. Stir the dish in 3 minutes interval (if you feel it is breaking the flesh parts then slow down and stir it with little bit more interval).
Ta da ! The dish is ready 😊
iii. Jackfruit pakoda(chips) - 
Ingredients -
- oil (for sure 😋)
-salt
-corn flour
-wheat
-jackfruit
-gunger and garlic paste
-Pressure cooker
Process-
You can use jackfruit directly without any pressure but with raw fruit pieces the chips get harder.
My mother put pressure and then prepare chips. First you need to pressure the jackfruit using small amount of water and pinch of salt. After pressure, drain all the water and dry it. Take an utensil and put fruit pieces with all the above written ingredients. Mind the proportions you use. After gentle mixing Jeep that for a while about 15 minutes.
Then prepare kadhai and put oil in large amounts so that fruit pieces fry nicely. Then fry the mixed fruit pieces.
Ta da! Jackfruit pakoda prepared 😊
iv. Jackfruit curry- 
Curry is liquid type. Here you can add legumes or other vegetables also.
I love when it has chickpeas. I will write the dish below with chickpeas.
Ingredients-
-Oil
-Salt
-Turmeric powder
-Chopped onions
-Chopped grren chilly
-Tomato puree
-Water
-Jackfruit
-Overnight soacked chickpeas
-Pressure cooker
Process-
First pressure the chickpeas with some water and salt. 
Prepare kadhai, heat oil and then put chopped onions and green chilly. Then stir that and put cut jackfruit pieces and boiled chickpeas. Then stir it well and in gentle hand. Add some salt. Add some turmeric powder after a while. Stir it for 5 minutes with 1 minute interval. Then add tomato puree. Stir it well and after some time add some water. Keep that on flame for more 10 to 15 minutes. Check it for proper cook. Ta da! -Jackfruit curry prepared 😊
These are some recipes from my beloved mother. There are many other recipes like chilly jackfruit, jackfruit Manchurian, jackfruit curry and all.

I want to share some knowledge if you have in a will to leave non-veg😋.
You can replace this fruit with non-veg dishes. It tastes similar to chicken pieces. Yes I know, you cannot compare with chicken if you have a great chicken lover. But if you have the desire to be a vegetarian or vegan leaving non-veg then you can consider this as a option. I know there is soyabean to replace non-veg. But this fruit is completely fresh and non processed, in the other hand soyabean is processed. If you are getting both processed and unprocessed food then try to eat unprocessed food.
